Nate Kiowa Jones #6765 Posted November 9, 2018 Share Posted November 9, 2018 I like it with kidney beads. But, if this is a question about the history of chili then it would be without beans. Long before there was refrigeration, chili was a method of preserving meat. The crushed/ground chili's (peppers) were cooked with the ground or chopped meat. Basically a red stew. cooked down to thicken. Then it was put in vessels or crocks with a layer of lard on top to be stored in the root cellar. This method allow you to just scrape the lard off and scoop out a portion. If it had beans in it, because of the carbohydrates , it would spoil quicker. It was for her sister who was coming back to visit TEXAS after she had moved to California many years ago and married a Left Coast Computer Geek. Anywho..... They thought it tasted Great and that they were eating Real Texas Chili. But I get a little nauseous everytime I think about it.
