I really do not get the hate doled out about liver. Never had Brussels Sprouts as a kid.  Lots of cabbage,  a fair amount of broccoli, but not  Sprouts.  First had them in a restaurant in my 20s.  Pretty good.  But until recently I didn't cook them at home because they always came out really mushy. No matter what I  tried.  Then I  tried an air fryer.  They're not in my top five,  but now when we get them from the Food Bank I know how to cook them.

Can't tolerate Liver -  "Healthy" and Mom served it frequently.  I like Brussels Sprouts - recently discovered roasted with bacon and a Balsamic vinegar / Brown Sugar reduction.  Yum!

Also sprouts halved, a little olive oil, and high-heat quick pan fry with diced parsnip is pretty good. The idea is to brown them without cooking them through. The parsnip adds a "peppery" flavor.

 

One of my favorite side dishes with Filet Mignon.

 

Liver and okra are two foods I have no interest in.

No, actually it tastes like Dr Pepper. Seems to be an acquired taste.

 

My father liked rutabagas. Liked boiled okra. And apparently liked liver because Mama made it frequently. But I didn't like any of the three of them, and still don't.

Makes you wonder how they know what carbonated Robitussin tastes like.

I haven't often had rutabaga, it's not bad.  Not particularly good,  but  not bad. 

 

Didn't see any okra in the stores here in California growing up.   In fact,  I  don't recall it until about 15 years ago.   First time I tried it was some frozen breaded okra.   Eh!  Pretty flavorless.  Tried it in a stew.  Eh!  I think my opinion of it is tainted by a comment by a classmate when I was in college who described it as  "string beans and snot."  

 

As you say,  some things are an acquired taste.

I've got a friend that is quite fond of fried okra and of okra pickles. Doesn't like boiled okra. At his urging I have tried both fried and pickled. The problem is they have the flavor of okra.

 

Now if I had had the fried to begin with, I might like it. Same with the pickles. But since my first exposure to okra was boiled, the flavor on my tongue makes me gag. So I don't like fried or pickled because whatever they've done to it, it still tastes like okra.

 

So it depends on how you first had it I think.

I did buy a jar of pickled okra.  Flavor was OK, texture was weird.  A lady in the store saw me holding the jar, contemplating buying it,  and gushed, "Oh my gawd! My husband and I love those! I've never noticed them here before!" and put 2 jars of regular and 2 jars of spicy into her cart. So I decided to try them. Eh! If I wanted pickles to go along with a sandwich and no others were available,  I'd eat them. Otherwise,  no thanks.

I get the hate. It tastes nasty. I don't care if anybody else likes it, I think it tastes nasty. Just about any time somebody has said, "Just try it. You might like it," I haven't. And if I have to "acquire" a taste for it, I won't.
