Gold is command/operations staff red is engineering. Maybe commo changed shops

Not sure. Gold is Command Color, and she WAS supposed to be about 4th in the Chain of Command. 

I think, just because that's what they did back then, they probably just handed her a gold uniform to wear.

I thought gold was the bridge crew. Sulu and Chekov wore gold. Makes sense to have Uhura in gold.

 

Blue is science. Spock wears blue. Nurse Chapel  wears blue. McCoy wears blue.

 

I thought red was everybody else, not just engineering. Scott wears red, but so does the captain's yeoman, and so does all of the security personnel.
