We had chicken cubed and simmered in Mojo sauce, then folded the chicken into warm flour tortillas, adding grated cheese, diced tomatoes and sour cream, served with a side of black beans and rice. I discovered this recently while toying around with ice cream and Lindt Lindor chocolate truffles. In a medium or large bowl put a pleasant amount of vanilla ice cream. Take a small sized bowl and place 4 of your favorite flavor of Lindor chocolates (unwrapped) inside. Place the bowl in the microwave and heat for 30 seconds. Take the bowl out and break up any chocolate still intact the microwave again for 20-30 seconds. Remove from microwave then slowly pour over your ice cream. Pouring slowly let’s the chocolate cool and stay on the ice cream rather than running down alongside. A slow pour creates a hard chocolate cap on your ice cream. To eat break through the chocolate shell with a spoon and enjoy the best version of a fudge-cicle I have found.
