My summer treat: cucumbers (Q'cumbr)

I know to many folks that Buffalo Wings taste like Chicken.

 

Well..... Q'cumbrs taste kinda like Watermelon to me and I can eat my weight in them.

I really like a cold Q.

 

I skin it and eat it like an apple.   mmmmmmmm gud, and refreshing on these hot summer days.

 

Just thought I would fling a cravin on some of ya.  :lol:

Love some cukes, but like them best sliced thin and put in water, apple cider vinegar, sugar and salt, along with some sliced thin onions.  Best to allow them to soak at least 24 hours.  Mighty tasty side dish that way.

Peel 'em, slice on the largest setting on an Oxo handheld mandolin, add a little salt, a little Truvia sugar replacement, and a healthy dose of rice vinegar or cider vinegar, plus a few drops of toasted sesame oil.  Toss, toss, mix, mix.  

 

Other option is peeling it and eating it like a banana.

I love Thai Cucumber Salad. Give it a try.

 

Thai Cucumber Salad

 

·      2 cucumbers peeled, halved lengthwise and sliced 3/8” thick

·      35g/1¼ oz caster sugar (can use granulated)

·      50ml/2fl oz rice vinegar

·      1 hot chili, finely diced

·      2 shallots, finely diced

·      2 Tbs. chopped cilantro leaves

·      40g/1½ oz roasted peanuts, chopped

·      ½ Tbs. Nam Pla (fish sauce)

Mix all ingredients well except cucumbers. Add cucumbers and serve.

If we're getting into salads:

 

GREEK SALAD

Cucumbers, peeled, quartered (optional seeded), and chopped.

Tomatoes, cut into bite sized chunks.

Feta Cheese, cut in about 3/8 to 1/2 inch dice.

Kalamata Olives.

 

Dress with salt, oregano, olive oil (this is the time to pull out that expensive extra virgin olive oil, I like the green peppery stuff, but the yellow buttery oil is nice too), and lemon juice and/or red wine vinegar (I prefer lemon juice).

 

Make sure that you have some good bread to sop up the juice from the bottom of the bowl.

My wife loves them this way without the sugar. I make them for her. Sometimes I substitute apple cider vinegar with rice vinegar.

I used to love cucumbers, but for some reason now when I eat them they don’t agree with me. I am not sure why. It’s a shame because I used to eat them all the time. 
I would cut them into spears add a little salt and they were so good. Now, I just can’t. My guts get knotted up. :(
