I like to cook down my syrups until they are thicker. Maple doesn’t cook down so well. I generally add maple syrup to white Karo to thicken it up some. The dark has a stronger flavor and blends well. Maple doesn’t cook down so well because if it was done right, it’s as thick as it can be as liquid.
DocWard
For the past few years, I've had this for breakfast: https://www.bobsredmill.com/old-country-style-muesli.html I have it with low fat milk, some blueberries, strawberries and a bit of maple syrup I get off the shelf at my local grocery. Sometimes if I see some at a farmer's market I will pick it up, just because. I also use it on the obvious things like pancakes, waffles, french toast and the like. I much prefer it to the "table syrups" available.
Cold Lake Kid, SASS # 51474
Do I like Maple Syrup? Yes. On waffles, pancakes, even on toast if I don't feel like going to the trouble of making the batter! AND I usually cook up Maple Flavour* bacon to go with it. * Yes, that's the correct way to spell it!!
Cyrus Cassidy #45437
REAL maple syrup as opposed to the fake sugar water? Absolutely.

I have been using Hickory Syrup. It’s very good too. This really piques my curiosity. I've never heard of "hickory syrup." Is this a sweet syrup, like maple? Something you'd put on pancakes and waffles and ice cream... or a savory, to be lathered on meat before going into the smoker? And where does one find this stuff? It is a sweet syrup. I use it on pancakes and as sweetener in oatmeal. The best one I have tried so far is from Ox Dynesty. They actually use oxen to haul the hickory bark to the plant. It is very good Hickory syrup. https://www.pahickorysyrup.net/ I have also tried hickory bark syrup and hickory nut syrup from Turkey Woods Farms. I bought it on Amazon. It’s also very good. https://a.co/d/gfqR2AV I haven’t tried it on meat, but that might be good. Smoked chicken wings with a hickory syrup glaze. Mmmmmm EDIT: I almost forgot. Hickory syrup is really good on Pumpkin Pancakes I make using Krust-Eez Pumpkin Cookie Mix. I get it at Sam’s Club. Blackwater 53393
I actually prefer honey to any of the syrups including molasses, although the Menonites up around where my mom lives make some fine molasses. My favorite topping for pancakes and French toast after honey is fruit syrups, blueberry, blackberry, pear and the like.

watab kid
yes , i enjoy it occasionally , on french toast - i dont eat pancakes or waffles , i had a friend that would tap the trees and collect the sap - cook it down n a a caldren over wood fire , i helped a couple times , the end result was quite good , but i dont recall the rest of the steps , he doesnt do it anymore as we are getting too old for all that work these days - it took a couple days to do it all after the sap was collected , that took a week or more IIRC
