Pesto, if you like it

I’ve made Pesto many times but when I bought some radishes and looked at the leaves, I thought, “can I?”  Yes.

 

snip the greens as soon as you get home, they will continue to draw moisture from the radishes while they are connected. The greens will have dirt on them, soak in cold water, swish them around and drain in a colander. Repeat the process until you see no more dirt.  I think three rinsing were sufficient, I did it four times.

 

proceed as with a normal pesto recipe, varying your quantities as appropriate.

 

you can do this with many greens, carrots, for example.
