 ..... slow cooked for about 300 hours, them suckers is tough .....

sounds like braised, moist heat, low temps, long time.

   ..... the best way I've found is to slow cook wombats along with three(3) large pebbles ;  when the pebbles are soft eat them and throw away the rest
