I might not buy store pork sausage again. Mom's Turkey Sausage Patties "Ground turkey is combined with a mild mix of spices in this quick and easy recipe for breakfast sausage patties. They are great with pancakes and eggs." Ingredients: 2 pounds ground turkey 3/4 teaspoon ground ginger 1 1/2 teaspoons salt 1 teaspoon dried sage 1/4 teaspoon cayenne pepper 1 1/2 teaspoons ground black pepper Directions: 1. In a large bowl, mix together the ground turkey, ginger, salt, sage, cayenne pepper, and black pepper until well blended. 2. Heat a skillet over medium-high heat, and coat with nonstick cooking spray. Form the turkey sausage into patties, and fry until browned on both sides, and no longer pink in the center. This should take about 15 minutes.
Forty Rod SASS 3935 Posted April 13, 2014 Posted April 13, 2014 Use beef instead of turkey and it sounds great. In my world, though I eat and enjoy both, turkey and sausage have nothing in common and are seldom mentioned together.

I might give it a try with beef, but I've never had good luck with making a beef-based sausage. Other than meatloaf.
