We all know that par-cooking potatoes before you fry them for hash browns, cottage fries, or such makes for a better finished product. I tend to cook them in the microwave for a few minutes to get them started. Then burn my fingers grating them. If you use the handguard from your mandolin you don't burn your fingers! DUH! Do have the last quarter inch that doesn't reach the grater, but by the time you have grated the last potato those ends are cool enough to hold. Talk about not being able to see the obvious!
