Super Bowl snacks

Grape jelly (or blackberry) meatballs, corn chips, and some fresh salsa.

 

Washed down with your favorite suds. I prefer Sam Adams when I want a hardy beer, Yeungling for a medium bodied, or Michelobe Ultra if you like beer flavored fizzy water.

WHY would YOU need receipes? You're one of the best cooks I have ever known! Take a Rum Cake! Take about anything you cook!

Take the Lil Smokies, chunk pinapple and cherries--in an electric skillet, use the pineapple juice for sauce and thicken with about a teaspoon of Corn Starch-----Uuuummm good

OR: Take anything with BACON! ;)

Take the Lil Smokies, chunk pinapple and cherries--in an electric skillet, use the pineapple juice for sauce and thicken with about a teaspoon of Corn Starch-----Uuuummm good

OR: Take anything with BACON! ;)

 

oooo if I could find a recipe with pineapple juice AND bacon.... that would be good!

Dang...I wasn't planning on having a Super Bowl party, but after reading these recipes, I think I'm gonna have one. It'll just be me and Mama, but, by golly, we're gonna eat good! Thanks for the ideas, gang.

It looks like I will have to make something with the ingredients I have on hand.

It is still so cold out and I'm taking care of my grand daughter tonight.

I won't get her out in this weather to go buy groceries.

 

I will have to wait for another time to try out some of the recipes y'all suggested.

Some of them sound very good.

 

 

That's okay...

I always have something on hand that I can whip up.

 

Here are a couple of my favorites.

 

Hot Pizza Dip

 

1 8 oz. package cream cheese softened

1 teaspoon dried Italian seasoning

1 cup mozzarella cheese shredded

3/4 cup parmesan cheese

8 oz. pizza sauce

2 tablespoons green pepper chopped

2 tablespoons green onions sliced

Mini pepperoni

 

Preheat oven to 350° F. Combine cream cheese and Italian seasonings , spread onto a 8" pan.

 

In a small bowl, combine mozzarella and parmesan. Sprinkle 1/2 on top of the cream cheese. Spread pizza sauce over the cheese mixture. Sprinkle with remaining cheese. Top with bell pepper, green onions and pepperoni.

 

Bake for 15-18 minutes. Serve with French bread or fresh vegetable dippers.

 

 

 

 

Chocolate Chip Treasure Cookies

 

1 1/2 cups graham cracker crumbs

1/2 cup Pillsbury BEST® All Purpose Flour

2 teaspoons baking powder

1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk

1/2 cup butter, softened

1 1/3 cups flaked coconut

2 cups (12 oz. pkg.) semi-sweet chocolate chips

1 cup chopped walnuts

 

HEAT oven to 375ºF. Combine graham cracker crumbs, flour and baking powder in small bowl.

BEAT sweetened condensed milk and butter in large bowl until smooth.

ADD crumb mixture; mix well. Stir in coconut, chocolate chips and walnuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets.

BAKE 8 to 10 minutes or until lightly browned. Cool.

 

 

I do have some bacon in the freezer and a can of pineapple chunks.

If I find a good recipe that includes both I will let you know.

This is the candy recipe that won me 1st Place and a hundred dollar bill in the dessert contest at Comin At Cha last year.

(I can't shoot fast enough to win anything but I can cook!)

 

Be warned that you must have a candy thermometer....

 

 

ENGLISH TOFFEE:

 

6 Hershey bars

1 cup whole pecans

1 cup chopped pecans

3 sticks butter

1 cup sugar

 

Crumble 3 candy bars and mix with whole pecans on cookie sheet.

Cook sugar and butter to hard crack stage. (It will seem like it takes forever, just keep stirring)

Pour over candy and pecans.

Cover with other 3 crumbled candy bars and chopped pecans. Cool and break into pieces.

I am definitely going to make these tomorrow before the game!

 

Bacon Wrapped Pineapple Bites!

 

Prep Time 15 Minutes

Cook Time 25 Minutes

 

Ingredients

 

1 pound Bacon

1 can Chunked Pineapple (large Chunks)

½ cups Brown Sugar

 

Set your oven to 375F.

 

Cut the pound of bacon in half. Put the brown sugar in a shallow bowl. Take a half a slice of bacon and dredge it through the brown sugar.

Put a chunk of pineapple on one end of the bacon slice and roll up. Secure with a toothpick.

 

Lay the bacon pineapple bundles onto a foil-lined jelly roll pan.

 

Bake for at least 25 minutes, or until the bacon looks brown and crispy.

Put them under the broiler for the last few minutes just to get them really crisp. But watch out – the sugar will burn!

 

Try to wait for them to cool slighty – only because the tasty goodness will burn your lips if it’s too hot! Enjoy.

Ooooo....those sound good. Never thought of the brown sugar before.

 

Hmmm.....a touch of cayenne or maybe hot paprika in the sugar would give a nice little bite. Or maybe chipotle chili powder. The mind boggles with the potential.

 

Leave it to a sweet lady to think of adding brown sugar.

Point of information - Hard crack is 300o to 310o F. Forms brittle threads when dropped into water and breaks if you try to form it.

One more idea:

 

Bleu Blazers

 

1/4 cup butter, room temperature

2 ounces bleu cheese, room temperature

1 tablespoon cognac

1/4 cup grated Parmesan

1/4 cup chopped walnuts

2 tablespoons minced green onion

1 teaspoon chopped fresh basil

cayenne to taste

English muffins

ripe olive slices for garnish

 

Mix butter and bleu cheese together. Add the cognac, Parmesan, walnuts, green onions, basil and cayenne. Lightly toast the muffin halves, spread with cheese mix, top with a ripe olive slice and stick under the broiler until lightly browned.

mmmmm, bacon.....

 

 

That pineapple bacon sounds gooooood.

 

My buddy makes bacon shrimp. He takes large shrimp and slices them about 3/4 of the way and stuffs with cheese then wraps with some bacon. I can eat the whole tray.

The Bacon and Pineapple thingies were a big hit.

....but my experiment I called Turtle Pecan Bars was an even bigger hit.

Chicken Liver? Really?

I haven't eaten a chicken liver since I was still living with my parents.

I can still remember my mother frying them for my dad like they were really something good.

Funny what we remember from our childhoods....
