Subdeacon Joe Posted August 3, 2014 Posted August 3, 2014 I just made a batch of these: Cornbread Waffles 2 Ingredients• 1 1/4 all-purpose flour• 3/4 Cup corn meal• 1/2 Cup raw sugar (You can use plain white if necessary)• 2 tsp. baking powder• 1 tsp. salt• 1 1/4 Cup milk• 1 stick of salted butter-melted• 2 eggsDirectionsCombine all wet ingredients in a large mixing bowl. In another mixing bowl, combine dry ingredients. Mix dry ingredients into wet ingredients. *Be sure not to over mix.Preheat waffle iron to desired setting. Grease waffle iron with non-stick cooking spray.Add 3/4 cup batter to waffle iron.Remove from waffle iron when golden- brown.==============================================================Did it straight up, following the recipe as far as ingredients. Method was: Beat the eggs on high for about a minute on high speed, added the milk, kept beating for another minute, added the sugar, another minute. Added the dry ingredients, beat for a minute . Added the melted butter, beat for about half a minute. Lots of possibilities. Use honey or molasses instead of sugar. Use bacon grease instead of butter. Add crumbled crisp bacon to the batter. DANGTHEY'REGOOD!

Hm....I learned johnnycakes as cornmeal, salt, maybe some sugar, and boiling water (maybe milk, or milk and water). Mix and fry up on a screaming hot, greased griddle. No flour, no leavening, no egg.
Noz Posted August 3, 2014 Posted August 3, 2014 A box of Jiffy corn bread muffrin mix makes a killer waffle as well.
