My idea on this subject. Is no fat= no flavor, no fat= tuff meat , all grass= tastes like grass. This is based on 35 years in the meat industry. Started on the kill-floor, went to become a inspector, last owner of meat processing plant for 27 years.  Just my $.o2   Bulldog Brown
