J-BAR #18287 Posted June 28 Posted June 28 As a USDA/FSIS veterinarian, I have some experience with slaughtering bison for human consumption. Most of them do not like confinement. Getting one from a trailer or truck into a corral with narrow lanes leading to the stunning box was sometimes impossible due to the bison's preference to not move. Which resulted in the butcher shooting the animal between its eyes while still in the trailer/truck. Tricky, but doable with patience. That shaggy coat becomes a source of contamination during skinning. Any hair shed onto the carcass must be removed by knife trimming; blasting hair off with a water spray won't remove bacteria sticking to the meat. Most butchers save very special words for skinning a bison. 4 4 Quote

J-BAR #18287 Posted June 28 Posted June 28 Buffalo, Missouri is about 43 miles north of Springfield. The high school mascot is the bison. Come cheer for the Buffalo bisons! 😂 3 Quote
Linn Keller, SASS 27332, BOLD 103 Posted June 28 Posted June 28 Kudos to Rye for that article ... if for no other reason than I had instant visuals on what looks like a waterboo, what looks like Mbogo, and what looks like Big Shaggy! The three mental silhouettes are quite different! (I've known all three to share a profound lack of tolerance to Homo Stupidicus!) 2 1 Quote

They're tame, you know....or so I heard from idiots for all over the world the summer I worked at Yellowstone. Heard the same thing about bears and moose, etc. 2 2 Quote

Trailrider #896 Posted June 28 Posted June 28 So. anybody out there shoot a bison rifle? Still, if'n you are goin' huntin' in Africa, better take somethi' heavy. Cape Buffalo can take a lot of punishment and still stomp ya. Friend of mine who used to guide, usually packed a .500 Nitro Express double rifle, and occasionally something bigger. For shaggies in North America a .45-70 or .50-90 will do, if you place the bullet properly. Quote
Pat Riot Posted June 29 Posted June 29 I prefer wood smoked over plain bison. Apparently in this poll the wood bison is over the plain bison. 3 Quote

Black Angus McPherson Posted July 1 Posted July 1 We had 3 bison get loose out around here yesterday. "One of the owners" got herself gored trying to herd them back to where they belonged. The police shot them, on the owner's instruction, because they couldn't get them wrangled and were in a populated area. I got a kick out of it when the news folk said the locals started "harvesting" the bison almost immediately. The owners were ok with it because they didn't want to see all that meat go to waste. mmmmm, bison burger sounds pretty good right about now. Newsman on the scene said he heard 8 to 10 shots. I wonder what caliber rifle they were using. I'd have thought a .223 would take more than that to put down 3 bison. I say rifle because it didn't look like a shotgun the PD was carrying on the news feed. Angus 2 1 Quote

You have to coax them into it. Yep our friends ran bison for years. Always used to say “you can lead a bison anywhere it wants to go!” They kept some beat up farm trucks around and using the cheapest horse cubes they could find in a white bucket would bait them into moving from one pasture to another. Secret was to introduce the babies to the bucket early. Asked why he didn’t fix the body damage he said it didn’t matter cuz when a big adult wanted to be first in line anything in the way was bound to be tore up! As far as the whole “bison vs buffalo” thing he figured it didn’t matter cuz people call things wrong all the time, couldn’t correct everybody. Regards Gateway Kid 2 Quote
