Yeah!!  I’m really not a big fan of cornbread either! My dad was injured and spent months in the hospital while the bills piled up and we wound up living in a house provided by the church for a while.  If not for that and donated groceries and such, we might have been homeless.

Anyhow, there was a lot of cornbread and beans and cornbread pancakes and corn muffins there for a while!

I will usually pass on cornbread when it’s offered with the exception of the varieties I mentioned in the previous post.

And yeah! I still like me some bean soup and mixed beans cooked up with ham and or ground beef or sausage!!  Fresh chopped onions and black pepper and I’m gonna come close to foundering if I don’t watch myself!!

Never had cornbread till I was married. My wife (now ex) used to make it. I love it! I buy it ready made sometimes at the grocery store. I can just eat it with nothing although I like it with any kind of soup.

WHAT ARE GRITS?

I'm kinda a newcomer to grits.  I've eaten them off and on for the last 10 years or so.  I prefer mine like most of the breakfast folks above, with an sunny side up egg mashed into to them, stir in some grated cheddar cheese and chopped up, freshly fried bacon.  Stir that all up and top with chopped green onions and that is my favorite breakfast!!!

I can summarize the outcome of this entire thread:

Blackwater is now morally obligated to host a cook off and show off all these dishes he won’t stop talking about.

I already asked the man to stop once, he has no mercy! Now I gotta clean and season this cast iron my roommates messed up so I can try to make it proper.

In and around 1990, maybe 91, Hardee's hamburger chain bought Roy Rogers fried Chicken. And they started selling fried Chicken at their hamburger shops.

Now I don't know if they got this from Roy Rogers or if somebody in the Norfolk area dreamed it up, but they sold cheese biscuits at Hardee's. And it was like the Red Lobster cheese biscuit - little pieces of cheddar cheese was in the biscuit dough and cooked while the biscuit was cooking.

Boy that was good.

I still lived in Florida but I was working in Norfolk, and one weekend I went home. Driving through some little town in North Carolina I got hungry, and pulled into a Hardee's. Ordered me a half a dozen cheese biscuits and a chocolate shake, went out and got in the truck and headed on down the road. After about a half a mile down the road I reached in the sack to get me one of them biscuits.

They had taken a regular Hardee's biscuit and split it and put a piece of American cheese in it. Made a cheese sandwich using a biscuit instead of two slices of bread.

Apparently they did not make cheese biscuits in North Carolina. And I was quite annoyed.

Partly annoyed because this wasn't what I wanted, but mostly annoyed because they didn't say - a half a dozen what??

I mean, heck, if somebody asks for something that you don't sell, let him know.

Grits by themselves are pretty bland. They’re like an epicurean blank canvas that you paint your own flavor preferences onto.

Something as simple as a big pat of butter turns ‘em on like a light switch!  Kinda’ like plain mashed potatoes without any seasoning, you toss a couple of garnishing ingredients in them and you want a plate full!!

AND THAT’S ANOTHER THING!!

We like good gravy!! On biscuits, on taters, over roast beef and roast pork, for dipping our chicken tenders in, and even just on plain bread!!

Grits ‘n’ gravy makes a great side for most any meal! Sausage gravy with breakfast, dark brown beef gravy with the evening meal, (ie. Salsbury steak or sliced roast beef) light brown gravy with pot roast, pork gravy with pork chops or tenderloin, and chicken gravy with nearly ANY chicken dish!!

Grits ‘n’ gravy makes a FINE substitute for taters ‘n’ gravy and you can break up some crispy bacon in any one of these dishes to really enhance the flavor!!

This thread has raised a serious question for me about different clubs - are there any clubs who have a chuck wagon at their matches?

That would be too cool to me, the original food truck!

Shall we start taking votes on Blackwater starting his own chuck wagon ?

I used to do a big batch of authentic chili for the gang at Possum Trot a time or two a year.

I’ve done jambalaya a few times at some events as well and a spaghetti dinner at Ponderosa Pines once for the old Smokeout In The Hills black powder match.

Lately, I haven’t done much big batch cookin’.  I really don’t have the facilities to do all the preparation and a way to transport all the stuff.

You can probably get instant grits on Amazon, you do have Amazon there right?

When I clicked on that link, it told me that box of grits was $7.85 and it had free shipping.

So if you ordered that box of grits to be sent to Australia, would they ship it for free?

Those things don't taste or have the consistency of real grits. I went to a Village Inn off of I-4 and US HWY 27 for breakfast before a large match in Orlando once. Asked for grits, they brought out instant grits...I sent it back.

That’s why I asked if they had an Amazon over there.

Close enough for someone who has never had them to get an idea of what grits are like.
