My Mom used to make rhubarb just to eat as a side dish.  IIRC she used abou a 1:1 ratio boiled until it was a mush.

 

I liked it

over ice cream, on oatmeal and other cereals, on toast.

Mine too. We had plants in the back yard, often ate them fresh picked and raw.

When I eat rhubarb,  I eat rhubarb,  and when I eat strawberries,  I eat strawberries.  

I don't get the mania for mixing the two.

Easy and Delicious Strawberry-Rhubarb Pie   

(From "Half-Breed Pete And the Rhubarb Pie")

Pie crust for double crust pie

2 cups rhubarb, diced

2 cups strawberries, cut up

1 ¼ cups sugar

¼ tsp salt

¼ cup tapioca

2 tsp butter

 

Put the bottom pie crust in a 10 in pie pan.

Mix up the strawberries, rhubarb, sugar, tapioca, and salt

Scrape it into crust, then dot it with butter.

Pinch on the top crust,

poke a few steam holes and bake at 425 degrees for about 10 - 15 minutes, then back off to 375 for the next half hour or so or until crust is golden.

 

Serve with vanilla ice cream or strawberry daiquiris.  Use extreme

caution if served with daiquiris.

 

Deep-Dish Pie

 

Pie crust for double crust pie +

3 cups rhubarb, diced

3 cups strawberries, cut up

1 7/8 cups sugar (Just under 2 cups)

3/8 tsp salt

1/3 cup tapioca

3 tsp butter

Mom frequently canned it and it was served with breakfast as a substitute for a fruit side dish.  She also baked rhubarb pie.

I never knew there was such a thing a strawberry rhubarb pie until is was married.  I prefer strawberry rhubarb to my moms rhubarb since it has a more complex taste as well as it's not as sour.

Rhubarb can prevent starvation.  Nuff sed.

ive had it in a number of ways over the years and ill admit im not fond of it - i like wine but that was NOT GOOD , the pie will never be touched again , after that there is nothing , i think it a weed

you certainly can if you can find any growing on my property , but leave the asparagus  and mushrooms

When my folks bought our place the homesteaders had planted rhubarb. That was over 80 years ago. It continues to grow stalks each year without care and makes good pie and sauce.

When I was a kid in PA we found rhubarb growing all over. My Mom and my Nanny (grandmother) would make pies with it. Strawberry / Rhubarb pie was very good. Just plain Rhubarb pie was just okay unless there was ice cream then it was just fine with me. :D

 

I haven’t had Rhubarb pie since I was a little kid. I think I need to get me some if I get the chance.
