Pretzilla

Ann first used them as grilled cheese sandwiches and they literally melted in your mouth.
These are so soft and delicious.
Next she used them with hamburgers and the slight pretzel taste enhanced the sandwich.
At breakfast, great with pecan apple butter spread.
Try them... you won't be disappointed.;)

Easy to make:

 

Buttermilk Pretzel Bread

For Bread:

 

6 Cups Bread Flour, divided

1 Cup Buttermilk

1 Cup Hot Water

¼ Cup + 2 TBS Brown Sugar

Yeast

2 tsp Kosher Salt

1 Egg (from a chicken)
 

 

For Poaching Liquid:
About 3 quarts of water, ¼ cup Baking Soda, and ¼ cup Brown Sugar.

1 Egg for coating loaves.

Proof yeast in hot water and 2 TBS of brown sugar.

While yeast is proofing toast 1 to 2 cups of the flour in a dry skillet.  Stir it frequently, you want it a light brown. 
Put the toasted flour, and all but 2 cups of the reserved flour into a mixing bowl along with the salt and brown sugar.  Blend together with whisk or dough hook.

Add the water & yeast, egg, and buttermilk.  Using the dough hook of your mixer, mix this for 4 to 5 minutes then slowly add the remaining 2 cups of flour.  Continue mixing with the dough hook until it pulls away from the sides of the bowl and forms a ball.  Turn out and knead a few times until it forms a smooth ball.  Put in greased bowl, cover, and let rise until doubled.

In a large kettle or stock pot bring the poaching mixture to a boil.
Heat oven to 350 F.

Oil two sheet pans, line with parchment paper and then oil the paper.

Divide the dough in half (obviously, divide dough into however many buns this would make.  I suspect it will make at least 8 buns, but don't hold me to that), knead into two loaves buns.  Put loaves buns, one at a time, into the poaching liquid.  Simmer for 1 minute, then turn over and simmer for one more minute.  Remove with slotted spatula, spoon, or whatever works.  Place on pan and paint with egg wash, being sure to get the bottom of the loaf.

Slash the top of the loaf 3 or 4 times – get fancy if you like.

Bake for 45 min.  Cool on rack.  Enjoy.

My wife brought some of those buns home a while back. I had one. They’re good. The other 3 disappeared. My wife liked them more than I did, I guess. :)

Works the same here - try with ham and melted Havarti cheese.

When I make pretzel buns I will slice them about 1/4 to 1/3 the way up from the bottom,  then remove a lot of the crumb from the top.  That gives a better bun to filling ratio and keeps the sandwich from being ridiculously tall.

this on a pretzel bun is pretty darn tasty....

 

Use your choice of a sirloin, brisket or chuck burger patty grilled, then topped with peanut butter, bacon, grape jelly and Sriracha sauce with a side of regular Fries or Sweet Potato fries/tots... 

 

p.s.a. = wear a bib unless you go knife/fork method 😁

Sounds like your home is like mine. My wife says if ya snooze ya lose after she has eaten most of whatever we are competing on. LOL

Walmart carries Pretzilla brand.  After reading this thread I did a duckduckgo search.  Went to brand website and found that Walmart carries them.  My wife had placed an online grocery order earlier and it turned out she had a few minutes to add items.  The buns were added to the order.  The buns are great tasting and can hold up to the pressure holding & biting a thick burger with lots of mayo & catsup.

Man, gotta try those with some brats or Italian Sausage and grilled peppers and onions.
