It’s from The Vidalia Sweet Onion Lovers Cookbook.

1 1/2 Cups corn muffin mix

1 Egg, beaten

1 15oz can of creamed corn

1/3 Cup milk

1 Large Vidalia onion

1/2 stick butter

1 Cup sour cream

1/2 Cup shredded sharp cheddar

1/4 Tsp salt

 

Preheat oven to350

Combine muffin mix, egg, creamed corn, and milk and pour into a buttered casserole dish.

Dice and sauté onion in butter. When soft, add sour cream, cheese and salt. Pour on top of the mixture in the casserole dish.

Bake uncovered for 40-45 minutes. Supposed to serve 4-6. I cut the recipe in half and eat all of it. :D

A restaurant, (Now Closed) used to do a "Blooming Onion" with a dip that was to die for!

Supposed to be an appetizer, but Sherron and I used to almost make a meal of it.

Dang, there I go again.

Thank you, Utah Bob!! 

 

I finally fixed the Sweet Onion & Corn Casserole following Bob's recipe.  It is delicious!!!

 

While the Casserole was in the oven cooking, I also grilled for Sharon and me a chicken.  I washed my meal down with a stout glass of cold milk.  

 

Between the Casserole and the chicken, I ate so much I about hurt myself! :blink:  Again, it was so-o-o-o good!
