Hamburger Stew (serves 6 to 8 ... may freeze leftovers in containers) Ingredients - 1-1½ pounds lean ground beef - 2/3 large onion, chopped - 3 fair size carrots, peeled and sliced - 3 stalks celery, chopped - 2 cans (14.5 oz) “Contadina” diced tomatoes with roasted garlic & herbs - 2 cans (4 oz) “Hatch” diced green chiles - 2-3 fair size peeled potatoes, diced - 1/4 cup long grain brown rice - 4 cups or more beef broth - 1/3 cup ketchup - 2 Tbsp Worcestershire sauce - salt and pepper to taste * any extra veggies you like. Directions 1. In a large dutch oven cook the ground beef and onions on medium heat until beef is cooked. Drain off fat. 2. Add in rest of ingredients and stir to combine. Bring to a slow boil on medium heat. 3. Cover and simmer on med/low heat for 30 minutes until veggies, potatoes and rice are tender, stirring a couple times. 4. Pat, I think the best "secret" ingredient is the “Cantadina” diced tomatoes with roasted garlic & herbs. These three hoods were holding Jimmy and Lois hostage in Perry's office. They'd been there a while and were getting hungry, so Jimmy called out for "sandwiches". That's all. Sandwiches. When the food arrived, Jimmy looked in the sack and said, in a tone of pleased surprise, "Hey, hamburgers!!" Like hamburgers was a special treat. He hadn't expected hamburgers. Corned beef on rye, or roast beef on a roll. Something like that. But hamburgers? Wow! But now there are hamburger stands everywhere. Hamburgers aren't no big thing.
