Real Wasabi comes from a variety of "Horseradish" only grown in the orient,   (Eutrema japonicum), also called Japanese horseradish, plant of the mustard family (Brassicaceae) and a pungent paste made of its ground rhizomes. The plant is native to Japan, South Korea, and Sakhalin, Russia, and its cultivation is limited because of its specific growing.  If it is imported from Japan, dried or in squeeze tubes, it is real,  They are rather particular about it.

Medium well, actually.  That's a light line of pink in the center with the juices running clear with, maybe, a tinge of pink to it.  It's done enough that it's killed any bacteria on the outside and parasites inside yet still moist.

 

Contrary to popular belief, there actually are levels of doneness of steaks that are between bleeding and still twitching and burnt to shoe leather.
