You flip the meat first.  That greases it so the eggs don't stick.

Saw a series of photos ... Soviet army ... entrenching shovel over a fire barrel used to fry eggs, a tired soldier sitting on the drum of his PPSh submachine gun, using it for a quick improvised seat ... looks like good use of available resources!
