Subdeacon Joe Posted January 30, 2021 Author Share Posted January 30, 2021 Beef Kebabs with Split Pea Hummus and Crispy Paprika Chickpeas PREP TIME4 hours COOK TIME45 minutes SERVINGS: servings UNITS: Ingredients BEEF: 2 1/2 poundsbeef, sirloin steak, boneless; fat trimmed and cut into 1-inch cubes 3 clovesgarlic, minced 2 tsppaprika, smoked 1 tspcumin, ground 1 tsplemon zest 1 tspsalt, sea 1/2 tsppepper, black; freshly cracked 2 tbspslemon juice 1/2 cupolive oil SPLIT PEA HUMMUS: 1 cupsplit peas, green, dried 1 clovegarlic, minced 2 tsplemon zest 1/4 tspcumin, ground 1/4 tsppaprika, smoked 1/8 tspcayenne pepper 1/2 tspsalt, sea 1 tbsplemon juice 1/4 cupolive oil CHICKPEAS: 1/2 cupchickpeas, canned, drained and rinsed 2 tbspsolive oil 1 tbsppaprika, smoked 1 tspsalt, sea SERVE WITH: 2 largetomatoes, Roma; finely diced 1/2 cuponion, red; finely diced 2 tbspsparsley, fresh; diced fine 1 tbsplemon juice, freshly squeezed 1/2 cupyogurt, plain handfulcilantro, fresh 8bamboo skewers, soaked in cold water for 30 minutes Instructions Place the dried peas into a bowl and cover by several inches with water. Cover and soak overnight. Sort and wash the peas. Bring 3 cups of water to a boil over medium-high heat in a saucepan. Add the peas, cover, and reduce the heat to medium low. Let the peas simmer for 30 to 35 minutes, or until tender. Transfer the peas to a food processor, and add the garlic, lemon zest, cumin, paprika, cayenne, salt, and lemon juice. Pulse. With the mixer running on low speed, drizzle in the olive oil until the hummus is smooth. Set aside. While the split peas are soaking, prepare the beef. In a bowl, combine the garlic, spices, salt, pepper, and lemon juice and whisk together until smooth. While whisking, slowly drizzle in the oil until the marinade is thick and glorious. Add the beef to the marinade, cover with plastic wrap, and chill in the fridge for 4 hours. Preheat the oven to 350 degrees F. Place the chickpeas on a baking sheet lined with parchment paper, and toss together with the olive oil, smoked paprika, and salt. Transfer to the oven and roast for 30 to 35 minutes, giving the pan a shake halfway through, until crispy. Set aside. Heat a large grill pan (or grill) over medium-high heat. Thread the meat onto the skewers. Place the meat on the grill and cook for about 2 minutes per side, 7 to 8 minutes total for medium rare (cook longer if you prefer your steak more well done). Rest the cooked steak on a board for 2 to 3 minutes before serving. Serve the kebabs with the split pea hummus, crispy chickpeas, tomato salad, and pita bread. Posted February 1, 2021 Share Posted February 1, 2021 TK's EZ Green Chile Corn Bread -1 box of corn bread mix ( I use Krusteaze honey corn bread mix 15oz) Disregard the directions other than the oven temp 375° and @ cook time @ 35 min or so. - 1 (14-15oz) can creme corn - 1 can sweet corn - 4 or 5 good size Anaheim or Pasilla green Chile's - 8 oz cheddar cheese -2 eggs - 1 dash baking powder Roast the Chile's in the oven until they blister, place in wet dish towel Let set @10 minutes then peel off the skin and remove as many seeds as possible. In a bowl dump the corn bread mix, Both cans of corn (with the juice) 2 eggs and baking powder. Mix thoroughly. Cut up the chilies into small peices mix in. Cut the cheddar into @ 1/2" cubes and mix in. I bake mine in a 14" cast iron skillet, but you can use a regular baking pan (baking time will vary.) I coat my skillet with oil (or bacon grease if the Wife isn't looking) dump in the mixture and bake until the top is mostly golden brown. Let cool slightly and ENJOY!
