He would add different meats and things like pineapple and peppers in layers. It was set vertically and cooked as it rotated next to a wall of burners. When you ordered a Shawarma the proprietor would slice the meat it off the outside of the stack onto a freshly baked pita bread. Makes my mouth water remembering it.
