The blade says "Made in USA" and underneath it says "Effingham IL"

I happen to own a Blackjack Knives 1-7 Sub-hilt with rosewood grips.  It's a very nice production knife at the prices they went for back in the early 1990's which was somewhere between $125-$225  IIRC.

 

Your's a Blackjack Knives 1-7.  The company went out of business in 1997.  It's been a long time since I saw their catalog online. While I do remember stag gripped knives, I do not remember any with carvings.  IF it came from the factory that way, it might be worth something to a knife collector.

i like it , looks very period to me , +1 for style points in my book , and it looks to be a great knife for cowboy steak dinner afte the festivities - i use mine regularly - but only on my own food ,
