Do these need certain bullets to function, i.e. hollow base?

Yes on the hollow base. The hollow base semi wadcuttets will work.

Question:

How do you get away with running Uberti conversion cylinders in Pietta revolvers?

I was under the impression that the differences between them were too great.

Thanks in advance.

Thanks for bringing that up. They are in fact Uberti's. I've changed the heading.
