Hamburger restaurants that have very crispy bacon usually cook it on the grill very early in the morning (before breakfast) or after the noon rush. It is placed in large pans and set aside. Usually and hopefully in a refrigerator for the next day. Then they get bacon out as needed and warm it up on the grill.
