Duck meat is darker because ducks actually use their muscles. Overcooked duck meat is horrible, overcooked chicken is what most cooks do anyway and would not know the difference. Duck does not have to be cooked well done, medium rare is good and safe -- unless the duck is processed alongside chickens. You will find differences of opinion on that last line but it's what I learned in culinary school and I've seen it on FoodNetwork many times and have survived eating medium rare duck on several occassions.
