Border House Reach

I thought it was Boarding House Reach. Although with Mexican food, Border House applies well. ;)

 

Making some soft flour chicken tacos and Tamale Corn Cakes here tonight. :)

Fix me a burrito with some of them beans and rice on the side

thats the fun part of border house reach ... no passin, serv your self, just reach across the table and get what cha want wash yer hands first though no spoons but in the beavs and sauce ... so help yer self and enjoy ...;D

Tonight is Mexican Night here at the Hacienda, Taco's, burrito's, Enchiladas, Border House Reach!

 

 

So, I am not really happy about this. Growing up Dad called it the boarding house reach. Being the youngest I was smaller and I could reach little.. lol.. So, please let me eat first.. lol... Border house.. love it.. lol

When company came over on a weekend, Dad wood pull out all da stops.....just to show his white friends we didn't need their help.

 

I can hear him now, in dat booming voice of his :.........

 

"Folk, round here we use da Border House Reach cuz we close to Ole Mexico, so y'all help yur self.

If ya go home hurry, it's yur own damn fault !"

 

 

 

 

 

I still smile when I think how he wood say it !! B)

it must be a border thing ... every time we had mexican food dad would say its Border house reach and and finn fer yer self ... so when i have mexican it popped in my head and i started sayin it too ....

Okay here's the recipe. These things are muy delicioso!

 

TAMALE CORN CAKES

3 Ears of Corn

1/4 cup heavy cream

1/2 cup yellow corn meal

1/3 cup all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 teaspoon hot sauce of your scoice

1 beaten egg2 tablespoons melted butter

2 tablespoons of finely chopped red or green chilis

 

Shuck the corn and keep the outer husks.

Cut kernels from the cobs'

Grind or puree corn with the cream in a processer.

MIx corn and cream with cornmeal, flour baking, powder, salt, hot sauce and egg.

Beat in the melted butter and chilis

 

Soften the corn husks in boiling water then place them incold water to cool and pat dry.

Grease a muffin pan and line each cup with a corn husk. (I suppose you could use paper muffin cups but this is cooler)

Fill each with the batter

Bake in 350 degree oven for 30 minutes,

Yank 'em out and eat with salsa.

There is no author listed. Publisher might be Phillip Morris 2005.

I think it's one of a series of books titled the Fifty Best.
