Subdeacon Joe Posted June 21, 2011 Share Posted June 21, 2011 My version (sort of) is a gallon of unfiltered cider, a fifth or two of medium quality brandy (depends on how strong you want it. You could use vodka or bourbon just as well. Or spiced rum. Or Meyers Dark Rum), a couple of cinnamon sticks, a few whole allspice, and some cloves. A few cups of sugar. Sometimes I'll core and slice up some apples to toss in. Mix everything up in a big pot and stir until sugar dissolves - you could mix it with some of the cider and heat it up - then divide it among several large jars. Store in a cool dark place for at least a week, either shaking or inverting the jars every day. Strain off and bottle. If you used slice apples, they will take on a lot of the raw alcohol taste. But don't throw them out, they are great to use in mince meat, or cooked with pork and onions. Or chopped up and put on icecream or cake. Link to comment Share on other sites More sharing options...
Hardpan Curmudgeon SASS #8967 Posted June 21, 2011 Share Posted June 21, 2011 Meg, hands down the best ever~! HOSS'S APPLE PIE FIRST Place 2 cups of raisins in a small pot. Add water until raisins are covered. Boil until the water is absorbed. SECOND Combine the following ingredients in a large pot. - 1 gallon pure apple cider (not apple juice) - 4 whole cinnamon sticks (broken up) - 1 teaspoon allspice - 1 teaspoon whole cloves or 1/2 teaspoon crushed cloves - 1/8 teaspoon nutmeg - 2 teaspoons vanilla extract - 2 cups raisins from step one - Bring to a slow rolling boil and let boil 10 to 15 minutes, stirring occasionally. Let cool, then strain with cheese cloth or coffee filter. A cotton dish towel works best. THIRD Place strained liquid back on burner and add the following ingredients. - ½ cup brown sugar - 3 table spoons maple syrup Bring to a boil again, stirring until sugar is dissolved. Remove from fire and allow mixture to cool. FOURTH ADD THE BOOZE -3 cups Bacardi 151 Rum (preferred), or use Everclear 150 (perfectly acceptable!). Other kinds of booze can be used, but for best results use one of the above – Bacardi is top choice! Pour it into your jug. For best results let it set for at least two weeks. ( it's one that I got from my twin Brother Hugh Damwright ) 1 Gallon apple cider 1/2 gallon apple juice 1 cup of sugar 6 cinnamon sticks Bring the above ingredients to a simmer until the sugar is melted. ROCKY'S APPLE PIE RECIPE First place 2 cups of raisins in a small pot Add water until raisins are covered, then boil until water is absorbed. In a BIG pot add: 1 gallon unsweetened, unfiltered apple juice (NOT cider) 4 broken cinnamon sticks 4-5 cinnamon hard candies 1 tsp allspice 1/4 tsp nutmeg 1 tsp whole cloves 1/2 tsp vanilla extract the raisins from earlier Bring to a slow rolling boil for 15 min. Stir occasionally. Let cool a bit then strain with cheesecloth Put liquid back on burner and add the following: 1/2 cup brown sugar 3 tbsp real maple syrup Bring to a boil again stirring until all sugar is disolved. Cool all the way this time. NOW FOR THE BOOZE Add 2 cups of Bacardi 151 rum 1 cup of light/clear rum 2 tbsp cinnamon Schnapps Bottle and let set for at least two weeks, but the longer the better.
