Got a pot of:

MORROCAN THREE-BEAN STEW

(From Weight Watchers “Dining for Two” Cookbook)

Modified to serve 4

 

2 tsp. oil (canola or corn work fine, or on weekends use olive)

1 large onion, chopped

2 cloves garlic, minced (I tend to use more)

1/2 lb. frozen bell pepper strips

1 - 14 oz. can diced tomatoes

1 - 15 oz. can red kidney beans, rinsed & drained

1 - 8 oz. can chickpeas (garbanzos) rinsed & drained

1/4 tsp. salt

2 cups frozen French Green Beans

4 Tbs. Raisins

1/2 tsp. ground coriander

1/2 tsp. ground cinnamon

1/4 tsp. cayenne

(Obviously, adjust seasoning to your taste; I tend to add a bit of paprika to the mix too).

 

Heat the oil in nonstick saucepan over medium heat. Add onion and garlic and sauté, stirring frequently, until golden. Add the bell peppers and tomatoes; bring to a boil. Reduce heat and simmer, uncovered, until slightly thickened, about 10 minutes. Stir in the kidney beans, chickpeas, and salt. Cook until heated through, stirring occasionally, about 5 minutes.

 

Add the green beans, raisins, coriander, cinnamon & cayenne, bring to a boil. Reduce heat and simmer, covered, stirring occasionally, until the green beans are tender and the flavors are melded, about 10 min.

 

Nutritional information:

Per 1 1/2 cup serving: 274 cal, 4 g fat, 0 saturated fat, 0 trans fat, 0 cholesterol,

527 mg sodium, 51 g carbohydrates, 13 g fiber, 13 g protein, 123 mg calcium

 

And couscous made with vegetable stock to sever it over so BMC can eat something.

 

Also hummus, pita wedges, mixed olives, deep fried calamari, chickpeas cooked in olive oil and garlic, and a big jar of giardiniera.

OK, I'll whip up some Southern Caviar to go with that.

 

2 (15-ounce) cans blackeye peas (drained)

 

1 (15-ounce.) can whole kernel corn (drained)

 

1 (10-ounce) can Ro-tel tomatoes

 

1 cup red or green peppers (chopped)

 

1/4 cup Jalapeno pepper (chopped)

 

1 cup onion (chopped)

 

1 (8-ounce) bottle Italian salad dressing

 

1 (4-ounce) jar pimentos (chopped and drained)

 

 

Combine all ingredients in a large bowl. Stir and gently mix.

 

 

Can you also grab some flour tortillas on the way, please?

I kept hoping I could see a puff of dust fly up where the bowling ball hit, but never did.

 

Bowling balls have been know to defy the laws of physics. Apparently the theory of what goes up must come down is no longer valid. Or maybe there is a bowling alley beyond the Al Gore Ozone cloud.

Hey! Look what I found! The base for Chatham Artillery Punch! Do we have any kind of sparkling wine? And how are we fixed for ice?

Yep. Weight Watchers. For those of us who are "Persons of Substance." :lol:

 

 

Seriously - there is some really tasty food in their cookbooks. Long gone are the days of unseasoned boiled chicken breasts and carrot sticks. At church we have done feast day meals for 150 almost exclusively from WW books, including dessert. Exceptions were the boiled potatoes with herbs and butter and the bread. And no one had a clue that we used WW recipes. The one I posted here we upsized to 50 servings from the Dining For Two book, then, when people wanted it for family sized portions, downsized it to the four servings I posted.

Well, this cat-lick went out and had not just a fish-fry, but an Italian fish-fry. Mmmm-Mmmm. Almost as good as a nice, greasy pepperoni pizza. Almost.

Well folks, the left over pizza is in the oven, I'm gonna head to the bunkhouse. Range is on summer hours now, so that means I have to be up at the crack of dark.

 

Not too many things can get me out of the bunk an hour or more earlier than I even have to get up for work, but shootin is one of them.

Monday night I made deep fried dills and they were pretty good.. let me go make a batch of those.. and how about a steak tonight guys? i am making one on the grill. I just got back in to spend time with all of you and the RATS.. lol.. Nice to be back home... Pizza? Hmmm sure why not.. i can have a slice and still eat steak.. So how do you want your meat? Oh, yeah how about some fresh squeezed lemonade?
