I think it would only take a couple of days for the vinegar smell to dissipate from the wood before varnishing.
Most of the methods I came across used water, a few used alcohol.

We get walnuts in our yard from the neighbors tree. I broke open the husk of one to see how big a whole nut was. My fingers were stained for two weeks from the inner shell. That stuff would make a stain for deep scratches.
I've done it with both. The first time I did it I I had a Lyman kit that had walnut, or maybe it was black walnut grip panels. I didn't want to stain the wood figuring that oil would be all I needed. Being a college student at the time I didn't want to lay out the money for a can of oil that I'd use maybe a teaspoon of so I used walnuts from the tree in the apartment parking lot. I carefully got that outer husk off and washed the shells. Then cracked them open and used the meat. My thought was "Walnut oil is just the oil from walnuts. If I rub the walnut over the wood it will press out the oil." I tried it on the inside of the panel first. Gave a nice dark, rich color.
I've used store bought walnuts for other small projects.

Toothpaste for polishing metal.
I used the meat from a couple of walnuts as "walnut oil" on grip panels for an 1858 Remington. Just kept rubbing them into the wood. Use that to touch up scratches.
A couple of times when power has gone out I've turned on the light on my cell phone, set it on a table, then set jug of water on it and PRESTO! I had a lamp to light the room.

HM Submarine No 3. This was a 'Holland' type submarine. One of 5 experimental craft, in service by 1903. Broken up in 1913 and HMS Victory is in the background. In 1831 the Admiralty issued orders for Victory to be broken up and her timbers reused in other vessels.
A public outcry against the destruction of so famous a ship led to the order being held in abeyance and Victory was left, largely forgotten, at a Portsmouth mooring.
The ship briefly returned to the public gaze on 18 July 1833 when the queen in waiting, Princess Victoria, and her mother, the Duchess of Kent, made a visit to her quarterdeck to meet with veterans of the Trafalgar campaign
